A Comparative Analysis of Different Species of Fungi Associated with Oil and Non-Oil Garri (Cassava Flour) Sold in Mudalawan Market, Bauchi State, Nigeria

In this study, different species of fungi associated with oil and non-oil Garri were isolated at Mudalawal market, Bauchi State, Nigeria. A total eight samples obtained inside a sterile container transported to the microbiology laboratory Abubakar Tatari Ali Polytechnic state for analysis. Malt Extract Agar was used isolation identification; about five fungal identified using standard method Microbiological techniques. Penicillium spp. (26.9 %) had highest occurrence in Garri, followed by Aspergillus (23.1 %), Rhizopus (19.2 Fusarium Mucor having minor frequency 15.4 %. Higher from compared samples. Moisture content recorded showed higher Oil than Non-oil Garri. The characterized based on their morphological colonial appearance. results show that consumers are exposed risk aflatoxin poisoning. Efforts should therefore be made improve quality Cassava addressing its handling processing practices.
